Heat a large pot on medium-high heat. Add olive oil, onion, and garlic. Stir frequently.
After about 3 minutes, add broccoli, zucchini, greens, fennel, and parsley. Stir frequently.
Add bone broth, salt, pepper, black pepper, coriander, and cumin. Stir and cover with a lid.
Bring to a boil and then reduce to a simmer. Simmer for 20-25 minutes (until veggies are soft).
Add coconut milk and stir.
Transfer the soup to a blender and blend until smooth OR use an immersion blender to blend in pot until smooth.
Return to the saucepan and reheat if needed. Add more salt and pepper if needed.
